POTATO SKILLET

Ingredients

  • 2-3 Russet Potatoes

  • 2 - 4 Eggs

  • 1 cup of different colored bell peppers

  • 3/4 cup diced onions

  • 1/4 cup of shredded cheese

  • 3/4 cup of tomatoes

  • Butter or Ghee

  • Optional: Protein of your choice

Directions

  1. Dice up potatoes into 1/2” cubes

    • Cut enough potatoes to cover the bottom of the pan you are using. Just one layer at the bottom will be enough.

    • Add butter or ghee to the skillet

      • Ghee can be a little more difficult to find but it does burn slower which can be helpful

    2. Fry Potatoes on medium to high heat until they start to soften

    • Mix them often to make sure none of them are burning. Add butter or oil if/when potatoes start to stick to the bottom of the pan.

    3. Preheat oven to 400.

    4. Dice bell peppers, onions, and tomatoes

    • First, add bell peppers to the pan. It should cover the potatoes

    • Once the bell peppers soften, add onions to the dish.

    • When the onions are cooked through, add the tomatoes. Mix well until potatoes are golden brown.

    5. Option to add protein of your choice to the potato, and veggie mixture as well.

    • Bison, ground beef or turkey, steak, shrimp, chicken, etc. are all good options to add at this point if you want to make the dish with more protein. 

    • If you do add protein, make sure to mix that in with the rest of the dish. I would cook that protein separately and once the protein is almost done I would then add it to the dish to let it finish cooking in the oven.

6. Crack eggs on top of the skillet and place in the oven

7. Sprinkle on shredded cheese and season to taste.
