Outside of physical fitness, Nikholas has a passion for cooking which comes from his Brazilian mother. Growing up, she made it a point to prepare meals made from real, whole foods for his family.

When Nikholas eventually left for college. Like any kid, Nikholas started his cooking exploration with the basics: scrambled eggs. When he soon realized he couldn’t function on eggs alone, anytime he visited home he made it a point to observe his mother to make sure he would leave his home with some new tips and dishes. When Nikholas returns to his apartment he then experiments with these new dishes. 

Whether simple or complex, Nikholas enjoys cooking meals that maintain his health and wellness goals. He has spent countless hours in his own kitchen and truly enjoys learning or sharing everything he has learned “in the lab.” 

Nikholas compares cooking/eating real whole foods to working or moving your body. Doing both activities at least three days a week is non-negotiable.

Nikholas’ Take on Seasoning: When it comes to seasoning your dish prior to grilling, baking, or frying I treat it like a good party: you better make sure that the ratio is on point, that there is enough people but, ideally, you would not have anyone who might have beef with each other. I say this to let you know that whenever I say “season” in any of the recipes down below I am only suggesting what you may want to marinate or season with but I encourage everyone to get creative in their own “labs.” Add or take away anything within from my recipes and let me know about any beautiful dishes you are able to create. My Favorite Seasonings: Salt, Pepper, steak rub (if you like steak), paprika, some sort of seafood-specific seasoning, garlic (from garlic cloves) and hot honey
