WATERMELON SUGAR SALAD

Ingredients

  • 6-10 ¾ inch watermelon slices

  • Shrimp seasoning

  • 4-5 Jumbo Shrimps

  • 2 tablespoons of feta cheese

  • ¼ cup of diced cucumbers

  • 1 tablespoon of olive oil

  • Optional: Tablespoon of honey or teaspoon of brown sugar

  • Lemon juice from half a lime

  • Mint to taste

  • Teaspoon of salt and pepper

Directions

  • Shrimp:

    • Season shrimp with at least paprika, salt and pepper

      • I typically use two different shellfish seasonings from a farmers market or local market

    • Fry or grill shrimp 

      • 2-3 minutes each side 

    • Cover the shrimp and let it sit in the fridge for 10-20 minutes (until shrimp has cooled) while you prepare the rest of the dish

  • Salad

    • Mix cucumbers, feta cheese, watermelon in to a bowl

    • Optional: Some sort of greens (spinach, arugula, or lettuce)

      • I like to use a mason jar or tupperware for this dish so it is easier to mix/shake

  • Masterpiece 

    • Add shrimp to the other salad ingredients

    • Chop up mint (I typically enough to cover half my palm) and add to the salad

    • Pour the lime juice and olive oil in the apparatus 

    • Optional: Add half a diced avocado only if eating/serving immediately

      • If you let the avocado sit in the fridge for sometime then the avocado might rotten
